從昨天開始?xì)鉁刂本€下降,沒有陽光的日子,心情也變得陰沉起來~~~~不知為何,我突然很懷念冬天的雪地、暖爐和火鍋~~~你看,人總是這樣的,當(dāng)時覺得很糟糕,而等到過去了,才發(fā)現(xiàn)其實(shí)那些東西也是很可愛的,可惜年華似水,有些事情可以重來,有些事情卻只能緬懷,比如……苦瓜牛肉 <wbr> <wbr> <wbr>如何才能牛肉滑嫩、苦瓜不苦?

今天的這篇,是專門送給優(yōu)謎童鞋的~~~眾所周知,我是個狂熱的肉食愛好者,但這種狂熱僅限于一種肉苦瓜牛肉 <wbr> <wbr> <wbr>如何才能牛肉滑嫩、苦瓜不苦?,我們家很少吃牛肉,我覺得牛肉纖維粗不如豬肉香,但其實(shí)牛肉處理得好,是非?;鄣?,今天就來試驗(yàn)下

 

 

苦瓜牛肉(苦瓜不苦,牛肉滑嫩都有小竅門)

 

原料:苦瓜、牛肉、雞蛋、蔥姜、鹽、白酒、食用油、水淀粉、黃豆醬等

做法:

1、牛肉清洗干凈后,切成肉片(橫切牛羊豎切雞,要把牛肉的纖維切斷~~)

2、切好的牛肉放入清水中浸泡15分鐘,水中加入一勺白酒

3、泡好的牛肉撈出瀝干,加入適量鹽和半勺油,抓拌均勻后腌制10分鐘,然后加入水淀粉,給牛肉上漿,最后加入半個蛋清,抓拌均勻即可

4、苦瓜清洗干凈后切片,鍋里放水,水中加少許鹽,水燒開后,將苦瓜下入焯一分鐘,然后迅速放入涼水中浸泡,然后撈出瀝干

5、炒鍋里放兩勺油,油熱后,將牛肉下鍋快速滑炒,牛肉一變色就加入切好的蔥姜末,加入少許黃豆醬,翻炒均勻,然后將處理好的苦瓜放入一起翻炒,然后關(guān)火裝盤即可

 

牛肉滑嫩的小竅門:

地球人都知道,不管豬牛肉,要香嫩就要事先腌制和上漿,給牛肉上漿的辦法各家不同,但我試驗(yàn)后覺得這個比較好,非常嫩滑:

1、牛肉要先泡水,水分多了肉自然會嫩,還能去除剩余的血絲,然后再加入適量鹽和油腌制,加入鹽可以入味,油可以使牛肉滑嫩

2、上漿要用到水淀粉和蛋清,水淀粉要一點(diǎn)點(diǎn)地加,然后用手抓拌均勻,牛肉會很快吸收水淀粉,大約有2到3茶匙即可,最后再加入半個蛋清,加入蛋清的牛肉炒好后會發(fā)白,但是口感非常嫩滑

3、炒的時候,油要比平時炒菜多一些,中大火快速滑炒,牛肉完全變白后即可關(guān)火,加熱過度,牛肉的質(zhì)感就大打折扣

1、切苦瓜:我是用刀橫著片苦瓜,將它的白芯略過,然后改刀成片,白芯最苦了

2、焯苦瓜:用開水汆燙苦瓜,可以去除部分苦味,水中加少許鹽,可以使苦瓜的顏色翠綠,但要掌握時間,這樣才能保持苦瓜脆嫩的口感

3、焯好的苦瓜要迅速過涼,口感清脆又不苦
